Quick & Cozy Tortellini Soup

I posted this to our Instagram stories in December and had a lot of recipe requests for it! I am finally getting around to actually sharing it - I know, shameful.  
This is a ridiculously easy soup that has all of the cozy components of a good winter soup without skimping on taste or nutrients and protein.  You can put it together in about 15 minutes total and with only 4 ingredients.  Our daughter has Celiac disease, so we use a gluten-free frozen tortellini, but you can absolutely use regular frozen or even refrigerated ones (just lower cook time)!
Enjoy!  I think this one is best enjoyed in front of a cozy fire! :)

Recipe - (Feeds a Family of 5 with teenagers and a little leftover for lunches - so scale in half if desired)
Ingredients: 

- 1 to 2 lbs ​shop.happyhenfarmnc.com/search?q=Italian+Sausage&options%5Bprefix%5D=lastHHF Italian Sausage (Any flavor - Hot, Sweet, or Mild) Bulk or Links
- 1 bag or package of fresh spinach (Or sub your favorite fresh green here - chard or a supergreen mix!)

- 2 quarts of chicken broth/stock
- 2 packages of frozen tortellini (gluten free or regular both work great!)

Grated Parmigiano-Reggiano or parmesan to garnish, if desired

Directions:
1.  Put a large heavy pot over medium high heat and add a few swirls of olive oil. I love a garlic infused olive oil to add a bit extra flavor - you could also add a clove of minced garlic to the pan with the spinach in step #2.  Add Italian sausage to the pot, removing the casing by squeezing out the sausage like toothpaste, if using links.  Break up the sausage into small chunks while stirring, browning all over until no pink is visible.
2.  Add spinach to the pot and saute until it is just wilted.
3.  Add about a cup of the chicken stock (no need to measure) and stir while scraping up anything that may have adhered to the bottom of the pot.  The flavor can hide there and you don't want to miss it!  Then add the rest of the chicken stock and stir well.  
4.  Increase the heat and bring the liquid to a low boil.  As soon as the boil starts, add the tortellini and stir. 
5.  Cook to the tortellini package directions.  The one we typically use says to boil for 3 minutes.  The tortellini should have puffed up in the broth by the time they are done.
6.  Remove from heat and garnish with grated Parmigiano-Reggiano or parmesan.  I also like to add extra cracked black pepper.  The parm and the stock tend to have enough salt for me - but, of course, season to your taste - it is the most important! :)
