This is my "go-to" Mother's Day brunch dish for two reasons - it requires zero work on the actual morning of Mother's Day AND it is Mothers' Day so no one can complain about having greens (which I adore) in their breakfast!
It is wonderful with our bulk (1 lb) breakfast sausage in mild or spicy. (Remember that all of our pork is grown naturally outdoors in wooded areas and in pastures without hormones or anti-biotics.) Want to make this gluten-free? I suggest picking a gluten-free bread that will hold up and not deteriorate like Against the Grain's baguette (Bread used in recipe photo and is found in the freezer section) or another brand with some structure. Consider toasting or baking until crusty it before adding as well. You could also switch up the greens and/or cheese to change the flavor profile! Enjoy :)
